Healthy snacks are a great addition to your weekly food prep. They are simple and easy to prepare. I wanted to share this recipe for a healthy snack that your entire family will love. Energy Bites are a great pre or post workout boost of protein and healthy fats. You can easily adapt the recipe with other add-ins like ground flax seed or dried cranberries. If someone in your family has a peanut allergy, you can sub almond butter but be sure to add some flax seed or some protein powder to hold them together.
No Bake Energy Bites by KC
1/4 cup Raw Organic Honey
1/3 cup Natural Cream Peanut Butter
1/3 cup Natural SunButter
1 tsp Vanilla extract
1 cup Gluten Free Old Fashioned Rolled Oats
2/3 cup Unsweetened Coconut Chips, crushed by hand
6 to 7 tblsps Mini Semi-sweet Chocolate Chips
In a mixing bowl, stir together the honey, peanut butter, sunbutter and vanilla until well blended
Add oats, coconut and chocolate chips – stir together to mix thoroughly
Cover bowl with plastic wrap and put in fridge to chill for at least 30 minutes. This will firm everything up and make the bites easier to roll
Remove from fridge and roll into 1” bite size balls
Store in air-tight container in the fridge
Here are a few tips that make this recipe super easy:
1. Spray your measuring cups with cooking spray so the honey, peanut butter and sunbutter will not stick to the cups as much and it makes getting the ingredients out of the cup a breeze.
2. Use a tablespoon to scoop out the mixture to form the balls. It is just about the right amount for a 1″ ball.
This healthy snack recipe is easily doubled. They go fast in our house. I eat two of them with an apple before a workout.
For those of you who have not tried SunButter, I highly recommend it. It is a bit thinner and sweeter than peanut butter. In recipes that call for peanut butter, I will sub part or all of it with Sunbutter. It is amazing on celery and toast. SunButter is a great addition to your healthy snack arsenal!
The sun finally made an appearance here in Tennessee today. But it is cold. We did not get out of the 40’s. I am so ready for the Spring as I know most of you are too!
